Extremely easy achievement. Simply knock another rider off their mount by reducing their health to zero.

Using #6 on your mounted toolbar will challenge someone to a duel, much like normal. I suggest starting off with a Charge (#3), then Shield (#4), then proceeding to either break their shields (#2) and / or jab them (#1) with the occasional extra charge (#3) until they are dead :)

You can build up 3 Shield Stacks before starting the duel.
Then just get out of melee range, charge in with #3 and press #1 for the melee strike right after it, so that both hit in the same moment and run away from him. Break his shield when you are >5 yards away with #2, renew your shield with #4 and wait till the charge CD is gone and repeat 3+1->2->4 :P

Winning a mounted duel ALSO counts as winning a normal duel as well, earning the "Duel-licious" achievement as well if you do not have it yet.

Easy mode to getting this:

Stack up 3x Shield
Make a macro and bind it to a key/mouse function
Macro contains:
/castsequence Charge, Thrust, Shield-Breaker, Defend

The easiest way to get this one is to get a friend to duel you and one of you loses then the other one does. It takes way less time this way and you both get it.

Or get a friend to allow you to beat them (If you can't do it the normal challenging way)
