Cooking VoD
Ingredients
Note: All measurements are by weight, with the exception of the buttermilk (Noted in fluid ounces)
12oz flour
3/4 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp cardamom
1/4 tsp cloves
1/4 tsp ginger
1/4 tsp nutmeg
5oz unsalted butter, room temperature
7.5oz white sugar
2oz dark brown sugar
2 large eggs, room temperature
12oz buttermilk, room temperature
2 tsp vanilla extract
Caramel Rum Topping
1/2 cup dark brown sugar
2 Tbsp unsalted butter, cubed
2 Tbsp heavy cream
pinch of salt
1/2 tsp vanilla extract
1 tsp spiced rum
Directions
Pre heat oven to 350F
Spray the inside of a bundt pan with non-stick spray then set aside.
Whisk together the flour, baking powder, baking soda, salt, allspice, cardamom, dried ginger, nutmeg in a medium mixing bowl. Blend well.
In a separate bowl, cream Butter and both sugars with a stand mixer or hand mixer. Be sure to get the butter and sugar mix light and fluffy.
Add in eggs to butter mixture one at a time and blend well before adding the next egg. Add vanilla and blend well.
Add flour in 1/3 at a time to creamed butter and mix until just blended, add ½ of buttermilk and mix again. Repeat with the flour, then second half of the buttermilk then finish with the last third of the flour. Do not be afraid of lumps.
Spoon batter into the prepared bundt cake pan and then spread the batter evenly over the top. Tap the pan 2-3 times to remove air bubbles.
Bake in the oven for 45-55 minutes, or until a toothpick that has been inserted into the cake comes out clean without any crumbs.
Let cake cool for 15 minutes. Flip onto a plate or cooling rack and let cake finish cooling.
While cake is cooling, place all the ingredients of the caramel rum topping into a saucepan on medium heat. Let cook until mixture boils then turn off the heat. Mix in vanilla and rum off-heat. Let topping cool for 8-10 minutes before pouring onto cake as a finisher.
