(I've seen some weird stuff make it into Blizzard games as Easter Eggs, and even though I doubt this is the reference, it wouldn't surprise me to discover it was part of the inspiration.) I'm sure there are pop culture references for both Shadow and Mrs. Fluffymuffins (as well as Lady Chaton herself), but I'm not hip enough to know what they are.
While one could argue that the ambiguity of the phrasing does not foreclose the possibility that the narrator met the man and his entourage while all were on the way to St. Ives, the most likely intended answer is "one" considering that the poem is told in the form of a riddle. The presumption being that the intent of the riddle is to trick the listener into unnecessarily performing the math before revealing that the simple application of logic and a careful attention to the terms of the riddle was all that was necessary - the narrator is the only person we KNOW was going to St.Ives, because he says as much. The hook is that he met the man, his wives, and their cats on the way, suggesting they were most likely going in the OTHER direction, away from St. Ives.
