Venture Plan (
link )as others have suggested is really good. I'm using it + CovenantMissionHelper (it can be found on CurseForge,
link). They can be used at the same time.
With Venture Plan you can add the followers you want and then let the addon add troops as needed and position all of them as is best according to iterations that it tests out. Then you can see if the mission succeeds and how much health your followers will have.
Even with the second addon for 9.1 missions (which was also mentioned by other commenters,
link - read the instructions there when installing), I've found that Venture Plan results can be unreliable sometimes with them, so CovenantMissionTable showing the results it predicts is good too. CovenantMissionTable can also change the position of followers but it won't add any troops. I use it when I'm sending missions over night, since it's okay to send for example 4 followers without any troops since they'll heal before I get to computer anyways. Also I sometimes change the position to have a highest minimum health rather than highest average health (which is what Venture Plan does) - I think it's better to get 5 followers to 50% than get 2 to 0% and 3 stay at 100%.
Adding another thing about the addons. When the baddies have random abilities CovenantMissionHelper doesn't optimize the position of your followers, meanwhile Venture Plan does. Venture plan also shows prediction health like 100-540/1100 or similar. CovenantMissionHelper can still run some simulations. If it seems close on Venture Plan, I run the simulations a couple of times on CovenantMissionHelper and if all succeed then I send it.

Recently I've started a challenge for myself where I'm going to be setting up 50 characters at lvl 60 with fully setup mission tables at rank 3 through the covenant sanctum. Yes this sounds crazy and yes this will take me a while.
So far I'm up to 8 characters with companion lvl's not fully maxed out yet - but certainly getting there! I wanted to properly see how much i'm getting daily so currently I'm doing a 1 week test to see how much they can provide in the future.
I've made a spreadsheet so you guys can see the first 2 days of me writing down data and so far it's looking very promising. M/D is how many times I collect missions daily.

Garrisons have been nerfed pretty hard overall since the start of SL, the Alchemist Stone vendor shuffle was hit too. These days I only bother with it for Hexweave bags (still a very solid seller for whatever reason), checking the mission table for Medallion of the Legion and Coalfist Gronnling, and collecting the free garrison resources to swap out for whatever raw mat is selling with the most consistency - it used to be True Iron Ore on my server but the market for that seems to have dried up recently.
Another possibility: If you have an alchemist you can look into how well Transmorphic Tincture is selling. It requires Crescent Oil (from Crescent Saberfish Flesh) and frostweed, which you can get from the resources trader and the garden, respectively. I was expecting the Transmorphic Tincture market to dry up with free gender swap available at the barber now but for whatever reason I'm still selling them all the time, and at a pretty high markup.
Bonus if you're Horde: the garrison is right next to the Nok-Karosh mob which you can kill for the Garn Nighthowl mount which you can then put on the AH. Since it's a very easy mount to obtain it typically doesn't go for more than a few hundred gold but hey - that's still a few hundred gold you didn't have before, and it adds up if you kill the mob regularly. Alliance can do this as well but your garrison is on the other end of the map so it's not as convenient unless you have the ogre portals.
