Most fishes produces filets with ratio of
2 fishes to 1 filet

Every fish has an attribute which you can read from Fishing Journal. For our purposes we are intrested in "Fresh Fillet":
"Salvanging this fish with Cooking skill can produce (...)"
- "... Fresh Fillet" - Pesce Arcobaleno Speculare, Grandocchio Ruggente, Luccio di Dorn
- "... a moderate amount of Fresh Fillet" Spigola di Fiume Quieta
- "... a large mount of Fresh Fillet" Squalo dei Bassifondi Kaheti, Pesce Lanterna della Regina, Corvo di Mare Spinoso, Pescecane Sanguinario

From my tests on limited amount of fishes ratio of fishes to produced fillets is:
Normal - 100 to 60 fillets (id assume it's as any other and it's just error of to little fishes used)
Moderate - 100 to 75 fillets
Large - 100 to 100 fillets

Worht noting is that
Corvo di Mare Spinoso - feels like the only fish which the only purpose is to produce fillet
Squalo dei Bassifondi Kaheti - produces as well 100 to 50 of Pezzo di Squalo dei Bassifondi (which is basically raw meat for cooking purposes) which makes it more valuabe
Pesce Lanterna della Regina, Pescecane Sanguinario, Squalo dei Bassifondi Kaheti - are "raw" material for Feasts so their value might be higher as well.
