The Lost Codex interviewed Creative Director Alex Afrasiabi and Technical Director Patrick Dawson at BlizzCon 2018, including questions about the origins of the Sethrak and why Kul Tiran Humans can't be mages.

Where do the Sethrak come from?
The Trolls and Sethrak lived in harmony over 10k years ago. Sethraliss was the loa that represented this lush region of Zandalar.
The region fell when the Old Gods began their assault on the planet--this is one and the same with the Troll and Aqir War. Mythrax was charged to take this part of the world. Sethraliss stepped in and they battled.
When the region became a desert, the trolls left for more habitable regions. Sethrak thrived in the desert, so they stayed, living in holiest of holy grounds.
Why aren’t Kul Tiran Humans mages?
Alex responded that he's with “with Lost Codex,” but he’s only one voice.
There are other factors the dev team needs to take into account, such as how will Kul Tiran Humans look while casting spells.
However...Jaina is a mage and Kul Tiran and “By Golly, The Kul Tiran should be mages as well!" They'll continue to have discussions on this.
On 8.1 Story Reworks, Saurfang, and Player Choice
Wow historically is not a game with narrative choice - so the quests needs to end in meaningful way.
When given a choice, it needs to matter--instead of being a confusing option.
The decision to add in a choice for the Saurfang quest to either betray Sylvanas or Saurfang was one that can't be taken lightly. It couldn't just be a meaningless choice.
Two separate quests and timelines had to be created to wrap up both choices in a way that felt satisfying.
Adding this bit of choice in 8.1 was a test to see how it goes. Alex joked "What if we take it all the way and the losing side has to delete their character?"
It was very inspirational when players removed their shoulder pads in solidarity with Saurfang--that was a big moment for the team.

Other Interview Highlights
The Drust are descended from seafaring Vrykul clans, gone to different locations. As for their spirit realm, Thros isn't a brand new entity we haven't seen before--it's part of the realm of Nightmare and Death.
Allied Races are chosen for coolness, passion, excitement, and other factors. Animations are important, as player character animations have the most out of anything in the character database. KT males and females are brand new rings with some animations that are different than humans.
Blizzard can't answer the question quite yet as to where Zandalari Paladins pull their power from, with Rezan not around anymore.
When asked if customization for Void Elves along the lines of High Elf fantasy would ever come, Blizzard responded that there's always a chance but be respectful when making feedback posts.
There could be a chance we'll see Yrel and AU Draenor characters again--in general, stories are dependent on a developer pushing a certain character or story forth. For example, Wrathion wouldn't exist if 2 passionate designers didn't push that story. Alex created Saurfang and kept running with it.
