Ooey-Gooey Chocolate Recipe

Ingredients
- 8 Ounces Semi sweet Chocolate chips
- 1/2 Cup Unsalted Butter, room temp, plus extra for greasing
- 1/3 Cup Granulated Sugar
- 3 Large Eggs
- 1/3 Cup Flour
- 1/4-1/2 teaspoon cayenne pepper (OPTIONAL)
- 1/4 teaspoon Salt
- Powdered Sugar, for dusting
Directions
- Preheat oven to 400F, grease muffin tins with butter and then coat buttered tins with granulated sugar. Remove extra and set aside.
- Melt chocolate in a double boiler or in the microwave at 15 second intervals until just melted. Set aside to cool.
- Using an electric hand mixer or stand mixer, cream butter and sugar together. Once light and fluffy, add eggs one at a time and combine completely before adding in a new egg. Add slightly cooled melted chocolate and mix. Be sure to scrape the sides.
- Sift together flour and salt and cayenne pepper before slowly adding flour mixture to butter and egg mix. Stop mixing once everything is just combined.
- Pour batter evenly into 6 greased muffin tins
- Bake cakes until the tops of the cakes just about set and do not jiggle, about 8-10 minutes
- Let cakes cool significantly, around 10 minutes Before you flip the muffin tin upside down on a serving plate. Dust with powdered sugar and serve
